Modified Atmosphere Packaging (MAP) is a packaging technique that preserves the quality and freshness of foods and extends their shelf life. For this purpose, food products are packaged in an atmosphere consisting of pure gases or gas mixtures. The most commonly used are nitrogen (N2), carbon dioxide (CO2) and oxygen (O2).
